Rustic Tahini Caramel Slice

Ingredients:

Base:

1 Cup Cashews, pulsed to make a meal

¾ Cup Shredded Coconut, pulsed with cashews

1 Scoop of Vanilla Protein or Collagen

1 Tsp Cinnamon

Salt, pinch

1 Tbsp Maple Syrup

2 Tbsp Coconut Oil

Middle:

3 Tbsp Tahini

1 Tbsp Maple Syrup

Salt, pinch

Splash of Boiling Water

Choc Top:

½ Cup Dark Choc 

1 Tbsp Cacao Butter or Coconut Oil

Method:

1. Pulse the cashews and coconut in a blender to make a meal and line a slice tray with baking paper

2. Add the meal with the other ingredients in a mixing bowl. Once combined add to a lined sliced tray.

3. Place it into the freezer to harden and make the middle.

4. Mix all middle ingredients in a bowl, adding a splash of boiling water to find a smooth caramel consistency. Remove the slice from the freezer and add the middle - pop it back into the freezer.

5. To make the choc top, over the stove top, melt the choc and cacao butter together. Once melted, pour over the rest of the slice and place it back into the freezer to finish off.

6. Once all is set, remove and cut it up with a hot knife.
